Keeping it Simple: Family Favourites

Dinner Roast Auckland

We have selected 3 of the kitchen teams’ dinner favourites.


I reminisce as a child; the sound, smell and anticipation of roast dinners bringing back uncomplicated childhood memories. They serve as a constant reminder of the familiar taste of nourishing food and time with our family.


Slow Roast BBQ Short Rib
A classic Sunday favourite in our household. The day would start with a gentle simmer with the beef slowly turning in the broth, this would become soup for lunch. This would be a tease for our dinner that we shared and occasionally I would try to sneak a piece before it was cooked. Hearty and mouth-watering beef short ribs, so tender!!! Garnished with slaw, served with Asian greens and herb fries. Can I have some more Mum?


Roasted Half Chicken
My sister’s favourite! This dish fills the house with a mouth-watering spicy sweet scent. “Ssamjang” a traditional Korean spicy dipping sauce has taken a half turn and is used as the glaze for our leisurely cooked sous vide 1/2 chicken. So juicy and tender from the sous vide cooking style. I recall clearly my father enjoying his ice cold lager with this dish, “Ahhhhhh! A match made in heaven!” he would exclaim. Garnished with slaw, served with Asian greens and herb fries, it is also one of our restaurant’s best-sellers.


Pan-fried Market Fish
Dad likes to fish; and when he does, I get the job of cleaning and filleting the day’s catch. Who can ever forget the salty sea aroma of the freshly caught fish, and the discarded scales in the sink after being cleaned. Mom would then crisp pan-fried with the skin on, we love the crunch. This evening we serve it with caper beurre noisette and preserved Meyer lemons. As with the other dishes, it is garnished with slaw and served with Asian greens and herb fries. A real treat for the family.
